Weekend Canning...

I found some really great deals I couldn't pass up, so I did a little canning this weekend. It began when my nephew, Dan posted on Facebook about a sale on butter at our local grocery store. Usually $4.29 a pound, the sale price was $2.39 a pound, so I ran to town and bought a case (30 pounds). My plan is to freeze some and to can some. Yes. You can preserve butter in jars. 

As I was entering the store, the first department is produce, and I saw a digital coupon sale on pineapple. As it's my favorite fruit, I immediately downloaded the coupon into my phone. The lowest price I'd seen for a single, fresh pineapple recently was $2.89 each. With the coupon, I could purchase up to five pineapples for $.88 each! I grabbed five beauties and then headed to the dairy section for the butter. Overall, I save $70 on my purchase.

It's cool enough these days that I can safely keep the butter in a large cooler out in the garage for now. The pineapple were more perishable, so they were the most important to put up first. 

I cut up all the pineapples and put the pieces into my large Kilner pot. I added spring water and brought the golden chunks to a boil. Jars were already prepared and lids were in the water getting hot. Pineapple is water bath canned, so my canner was already heated and ready for the jars.

Once the pineapple boiled, I turned it down to simmer ten minutes, and then I packed the jars. I ended up with ten pints of pineapple, and a bonus five pints of pineapple juice! 

I also purchased English beef roasts when the store had them on sale late last week. I bought about eight pounds for $25 and change. Once I'd trimmed off the silver skin and fat (to be rendered into tallow along with the other trimmed beef fat I've had in the freezer), I ended up with close to seven pounds of meat to preserve.

I put up three pints seasoned with the last of my Betts Seasoning. Sadly, during covid the company that manufactured this seasoning closed its doors. I've been unable to locate more of since, and it's really a favorite. If any of my Florida friends know where to find more (or get it and mail it to me), I'm happy to pay for it.

There were an additional four pints seasoned with a recipe from my pressure canning cookbook. While the pineapple is sweet and acidic enough to water bath, the beef has to be pressure canned to be safely preserved. Each jar of meat contains two servings, and I added onion and garlic, too. That costs less than $4 a jar, making it well worth the effort.

In the photos I've shared, all the jars were fresh from their canners, without labels. After dinner, everything was cool enough to remove the rings, clean the lids, and label the jars. Once the jars sat out a bit longer, I could put everything into the pantry...always a satisfying task.

Later this month, I'll be canning more hickory syrup, the butter, and more meat. I have frozen turkey and chicken that I can preserve in jars. It's much more convenient when choosing a meal for the evening, rather than having to wait for things to thaw. I also still have fourteen one-gallon bags of frozen tomatoes to be canned into pizza sauce, homemade Rotel, and stewed tomatoes. I'll roll out of April with a completely filled pantry!

As it's already a new month, I have book work to do, along with finishing the ladybugs, and a new project for my shop. I also have the mockingbird, plus there's a wedding on April 20th, and I'm going to embroider a monogram to frame for the bride and groom. I guess I'd better make up my schedule so I can keep on track. 

Handsome is doing much better, and I know that your prayers had a lot to do with it. Added to mine, he's healing well and almost ready to resume his regular activities. He's taking it easy, as he has a rehearsal tonight for an upcoming concert. I'll just be making sure he doesn't overdo it. I can be a real thorn in his side if I have to, and that's no April Fools!

      Thanks! Pineapple has always been my favorite. My mum told me she used to eat pineapple every day when she was pregnant with me. Maybe that's why? I was tired when I finally finished all the canning, but I'm anxious to do more.

  2. The store allowed you to buy that many? That certainly doesn't happen here because there's always a limit with the top number generally being 4 of any one item (and sometimes only 1 or 2).
    Glad to hear that Handsome is doing well - keep being that thorn in his side!

      Yes! The store had a five pineapple limit. lol I grabbed all I was allowed. That's plenty to keep me in my favorite fruit for a while. Handsome is doing well, except he tires quickly. He's got a rehearsal tonight, so he's taking a little "practice nap" right now. I'll keep after him for sure!

  3. Donna, you have been one busy lady! The pineapples look so good! I never thought to can them even though I buy them canned in the store! I'm glad to hear your husband is doing well.

      It's so easy, too! I just cut off the top and bottom, then cut them into quarters (lengthwise). Cut out the core, remove the husk enough that there aren't any brown dimples in the fruit, and then cut into cubes. I hot pack to keep the fruit from floating. Place all the fruit into a big pot with enough spring water to cover. Bring to a boil, and then simmer for ten minutes. Spoon into clean, hot jars, leaving a 1/4" headspace. Top with liquid to cover, and use a tool to get out all the air bubbles. Wipe rims of jars with white vinegar, place warm lid and ring to finger-tight. Place in water bath canner with enough water to cover jars by an inch over the tops. Bring to boil and start timer for 15 minutes. (I do the same for the juice) Let sit in canner for 5 minutes, remove and allow to cool down (and seal). Once cool, remove rings, wipe lids and label to store. Easy peasy!

  5. My Donna your jars of pineapple and beef and juice look wonderful. I did not know about canning butter. I freeze it whenever I can find it on sale. About 2 weeks ago Aldi's had theirs on sale for 2.59 but there was a limit of six per customer. Thanks for sharing your wonderful and inspiring endeavors. Glad to read that your hubby is doing better. Have a great start to April.

      Thanks! I only recently learned about canning butter. You can either go old school...heat jars in oven, fill with melted butter, wipe rims and add lids and rings as usual. Let sit on the counter until tipping ever 20 minutes or so to keep solids from separating. Once they seal, you can store. The other method, which I'll probably do is pressure canning. I have to look that one up again and can share once I review the process. I got my butter at Pick n Save. Their weekly ad is good through April 8th, and there's no limit on the butter. I may even go and get more! We only use real butter here, and I use unsalted for baking bread. I'll be checking to see if the unsalted is included in the sale!
      Handsome is much better, but on soft food until the weekend. I've been feeding him well-mashed potatoes topped with protein-rich, farm-fresh eggs. He needs more than just yogurt and broth to keep his strength up.
      April's gonna be busy! (I even picked up two extra days the next pay period at work to help my boss.) whew!

      I'm paying for it today. A day in the kitchen on my feet, and the next day doing bookwork in my office on my...butt. I'm not sure which is more strenuous. I'm glad he's on the mend, too.
