Yes, We Have No Bananas...

Bananas never go to waste in our household. I make them into a delicious, nutty banana bread. It's so hard to wait until it cools down...Can't you just smell it?

I made a loaf of banana nut bread on Saturday and decided you might like to try my modified family recipe. (I think future cooks just make something better by adding their loving touches, don't you?) I'm not including nutritional values, because, face it...I don't want to know such things when I'm eating it!

Liljegren's Banana Nut Bread

2 1/2 c. all purpose flour
1 c. granulated sugar
3 1/2 teasp. baking powder
1 teasp. salt
3/4 c. milk
1 egg
1 cup chopped nuts
(I prefer unchopped pecan halves,
but nuts are completely optional)

1 c. mashed bananas (2-3 lg. bananas)
My secret ingredient: 1 teasp. real vanilla extract

Preheat oven to 350ยบ. Measure all ingredients into a large mixing bowl; beat on medium speed for 30 seconds or until mixture is fully incorporated. Pour into a well-greased loaf pan. Bake 55 to 65 minutes, until a toothpick stuck into the center comes out clean. That lovely crack on the top of the loaf is typical. Cool (at least a little bit) before slicing. If you're really misbehaving, you can spread a little real butter on it. Makes great toast in the morning, too. Hope you love it!

I make my own vanilla extract. Let me know if you'd like me to share that recipe with you some time. It makes a great gift when packaged in a special bottle.

  5. Thank you for the recipe for the banana loaf, it looks fantastic, I can almost smell it. Now to get the ingredients together. Please could you share your recipe for vanilla extract. The one I can get here in the UK just doesn't seem to be as good as the one I was used to in SA and I think I would be happier if I could make it myself.

  12. thank you for your banana bread recipe. I am going to try it. I love banana bread, but it comes out too dry most times when I make it, or sometimes the center is not cooked enough. I'm still trying. Barbara
