Two New Recipes...

I have tried two new low carb recipes that I think you might like, whether you're on a low-carb kick or not. My first dish is called Breakfast Omelet Muffins. Here's the link.

They're like Egg Bake without the crust, and they were a real hit around here. They remind me of the Breakfast Quiches that they serve at Paneras. Next time, I'll also add some sauteed mushrooms and onions, but you could also substitute the Italian sausage with bacon or ham, too!
My friend, Tammy also suggested that I try making my usual potato salad, but substitute the boiled potatoes with steamed cauliflower. I used my own family recipe for potato salad, but there are a few good ones available, too. You might try this one or this one.

I also tried those Zucchini Chips. What did I think of them? Oooook! I used the smaller zucchini that you saute', and perhaps I should have used the larger ones. I may take the time to repeat the recipe with the larger ones, but I won't make them with the small ones again. You might like them, but my opinion is that they were a lot of work with iffy results. I will be trying the Zucchini Fries, though and will let you know what I think of them.

I don't know whether or not I told you before, but I'd gained about eighteen pounds over the summer. I was horrified when I got back home and stepped on the scale, so I immediately went back to my favorite plan - Dr. Atkins - which always works for me.

I started the plan on September 29th and have lost twenty one pounds so far. I'm not finished yet, and I'm finding a lot more options to make following the plan easier to stick with (long term) this time. I'm hoping to be the "Disappearing Woman" over the next six months or so as I make my way back to a normal, healthier weight.

If you'd like, I'll continue to share healthy recipes with you, as I work my way back into a Size 12. Please let me know if you try these recipes, too. I'd love to know what you think.

  1. Congratulations on the lbs. lost! That is wonderful. Best wishes to you on your goal. I know you can do it! I do appreciate the recipes and would enjoy more. I also need to watch what I eat on a daily basis because it can get out of hand too quickly. Have a wonderful day! Twyla

  2. Thanks for links to the recipes. Any new way to fix eggs is welcome. With all the chicken and eggs I am eating.....is that a feather?
    I used to go to WW, as we were leaving the meeting the leader always said, "I hope to see less of you, next week!"

  3. Donna, thanks for sharing those recipes with us! They sound really good. I have to do something about my weight also. I have been thinking about doing Dr. Atkins. Is it the New Diet Revolution Dr. Atkins or the original one?

  4. Donna Dear Congratulations on your weight success! You are a smart woman to eat healthier and feel better by shedding some weight. I myself am a Weight Watcher member and am trying to eat healthier. Your recipes sound very worth trying and I thank you for sharing them. Right now I know I am eating wrong but my heart hurts so with losing BooBoo I must eat ice cream to soothe the pain. Hugs and healthy eating...
