It's Not Bread, But It's Not Bad...

I love bread. Any kind of bread. Hot, fresh out of the oven, crusty outside bread is my favorite. It makes me happy...and it travels straight to my hips. Gaaahhh!

Over the four months we spent in the Flying Cloud, I managed to gain eighteen pounds. I didn't see it coming. I just knew that I had to buy a couple new pairs of shorts before we headed home...in a larger size. When I got home and weighed myself, I went into mild shock.

The reason I'm telling you this is so that you now know that I didn't eat any candy corn (my favorite) this Halloween. I'm gettin' up close and personal with Dr. Atkins. I've already lost the weight (over the past three weeks) that I gained on our trip and now I'm going for more. But I miss bread. (Aren't you proud of me that our girlfriend's group meets every Tuesday night at Paneras and I haven't been eating bread?)
My friend, Tammy is also on a weight loss regimen that shares some of the same features of the Atkins Diet, and she told me about a few recipes for bread substitues. I was particularly interested in the "bread" recipes. One was for Cauliflower Pizza Crust and another for Cauliflower "Bread" Sticks. I was intrigued.

Yesterday afternoon, I took a break from working on my guild competition quilt so Handsome and I could make the Bread Stick recipe. The main ingredients are cauliflower, mozzarella cheese and egg. I'm not going to go into the details of the recipe here, but I am sharing this link to Sandy's Kitchen blog so you can print out your own copy. (I took these photos after our baking adventure today.)

The Cauliflower Bread Sticks came out of the oven with a nice, crispy texture and were a great substitute for a real bread snack.

After further exploration on her blog, I found that Sandy also has a recipe for Revolution Rolls that I can't wait to try. (It's so hard to make a sandwich without bread, and I'm a little tired of using lettuce as the support for the rest of my sandwich ingredients.) We were actually quite pleased with the flavor of our bread stick substitute, and look forward to making the rolls. I promise to come back and tell you what I think of them after I make them this week!

  2. The cauliflower bread sticks sound good. I just started WW a couple weeks ago, and think I'll give these a try.

    And how do you go to Panera without eating bread?!

  3. Donna, good for you!! Those cauliflower bread sticks pretty close to bread. Atleast you can feel like you are cheating but you are not you are being good :)!

  6. Congratulations Donna Dear! Those "bread" sticks do look very yummy. I suppose if I can learn to eat cauliflower "mashed potatoes" then I could also eat faux bread made with cauliflower. It took me 2 1/2 years to get rid of 13 pounds so you are really doing fabulous. Blissful cooking...

  7. Sometimes we think so much alike it is scary!!! I too am on the low/no carb diet. I have lost about 10 lbs over the past 3 weeks.
    That alone is wonderful but the best part, my rheumatoid arthritis is so much better, I must be one of those people that sugar causes an inflammation reaction. I too miss bread more than anything else. I was a cookie/cake girl but I really don't miss those things it is the BREAD! I will be checking out the blog and the recipe!

  8. Oh Donna, I'm so proud of you for losing that weight. I sooo understand. I never had a problem til my daddy got sick a few years back, & ever since I've gained. I lost 17 lbs. last Fall, and weighed the other night & found out I'd gained it all PLUS 2.5 more pounds back. UGH....I'll sure be trying the breadstick recipe as I can't do without a little bread, too! BTW, I was gathering acorns at my mom's today for a craft project and thought of YOU!!! :0)

  9. Gonna go get that recipe! Sounds so yummy! Being a "veggie" this is right up my alley. Glad you have lost the weight. It's easy to do when you are on vacation and don't step on a scale every day.

  10. Years ago I learned of a recipe using cauliflower as hot cereal in the morning, and I'm not kidding you it was YUMMY! I simply steamed some cauliflower, cut it up fairly fine, to be the consistency of hot cereal, poured a little cream on it, and it passed the test! Seems cauliflower is good for all kinds of things!
