Canning Day...

I have these two beautiful pie pumpkins, purchased last time I was in Portage. I got them from my favorite farm stand.

Today, I'm going to halve, clean, roast, purée, and pressure can them to have for future pumpkin pies or other pumpkin treats. Yes. It's considered a "rebel method", but the Amish have done it (among others) for years, and it's safe, so I'm doing it.

Handsome is feeling a bit better, but I'm making him take it easy, so I'm going to figure out a nice treat for him for dinner while I'm at it.

It's absolutely gorgeous outside, so I may decide to spend some time outdoors later, too. I'll let you know tomorrow.

  1. The RC cooked some pie pumpkins and now there's lots of pumpkin goodness residing in our freezer (he says enough for at least 5 pies). Considering that it's about $6 for a can of pumpkin right now, it's sure a whole lot cheaper.
